On my last visit to Pau I discovered the ideal spot to savour the region's best wines along with original cuisine based on local produce prepared by a Japanese chef. It's a perfect blend in a relaxed and original atmosphere. They serve over 250 natural wines to buy or to drink on site, and a spontaneous kitchen market. Highly recommended!
This is a restaurant specialising in creative delicacies. Some dishes really stand out: scallops, and smoked marked with ravioli stuffed with chicken and its juices, truffles, flowers, green mango mirepoix with Espelette pepper and sweetcorn foam with bacon; the boiled crawfish and smoke with an egg with minced chicken and spices, a whipped cream of goat's milk and blood orange butter with galangal.
